Justin’s Turkey Bacon Avocado Salad

Still have turkey left?  Probably not.  But if you do, this is a delicious way to use it up.  Of course, this works with chicken or salmon as well.  Especially smoked salmon!


Diced turkey

hard boiled eggs


bacon, crumbled

red onion, thinly sliced and fried with the bacon

1/2 cup Dijon mustard

1/4 cup honey

1 tsp. balsamic vinegar

1/4 cup chicken broth (I know this sounds gross, but you’ll just have to trust me).

I didn’t write any amounts for most of these ingredients, since it all depends on how much turkey you have and how many people you are trying to feed.  The dressing will be about 1 cup, so if you think you need more or less dressing, adjust accordingly.  Pouring too much dressing on a salad can ruin it, so be frugal.  If you are feeding 4 people, I wouldn’t use more than 1/3 of a cup total.

Mix Dijon, honey, balsamic vinegar, cup chicken broth in a bowl.

Put lettuce in a big bowl.  Toss half the dressing on lettuce and mix.

Put turkey, eggs and avocado on lettuce.

Drizzle the rest of the dressing over the ingredients.

Top with fried red onion and bacon.
