Butter Chicken
This is a little complicated, but well worth the effort! I was at a friend’s party and her mom was visiting from India. She made this dish and I begged her for the recipe that follows. The best butter chicken I’ve ever had! If getting fenugreek leaves is going to be a challenge, you can substitute with yellow or brown mustard seeds.
1st Marinade:
2 lbs. boneless skinless chicken thighs or breasts, cut into 1-inch cubes
2 tsp. fresh lemon juice
¼ tsp. salt
½ tsp. paprika
Marinate in fridge for 2 hours
2nd Marinade:
¾ tsp. crushed fenugreek leaves (you need to get these at an Indian grocery in Denver or the Springs – I usually buy them frozen and keep them in my freezer for when I need them)
¼ tsp. turmeric powder
1 tsp. garam masala
1 tbsp. oil
1 tbsp. ginger garlic paste (you can buy this in a jar or make your own)
½ cup yogurt
Add this to the 1st marinade and marinate for another 30 minutes.
Makkni Masala Gravy
2 tbsp. butter
2-inch cinnamon stick
2 cloves
1 tbsp. ginger garlic paste
1 to 2 thai chiles or serrano peppers
4 large tomatoes, pureed
1 tsp. red chili powder
¼ tbsp. sugar
1 tsp. salt or to taste
10 cashews or 10 almonds, ground into paste
1 tsp. crushed fenugreek leaves
½ tsp. garam masala
¼ cup heavy whipping cream or plain Greek yogurt
1/4 cup chopped cilantro leaves
After it marinates, grill chicken or put in oven at 450 degrees for 15 minutes or until moisture evaporates.
For the masala, add butter to saucepan. Add cinnamon and cloves to butter and cook until fragrant. Add ginger garlic paste, green chiles and sauté for 30 seconds. Add tomato puree, red chili powder, sugar, and salt. Cook on medium until the gravy begins to thicken, about 20 minutes. Add 1 cup water, almonds or cashews, and fenugreek leaves. Add chicken and simmer 5 minutes until cooked through. Add garam masala and simmer 2-3 minutes. Pour in heavy whipping cream. Turn off heat and garnish with cilantro. Serve with rice or naan or some other Indian flat bread.
