Sun-Dried Tomato Pasta Salad

1 (8-ounce) jar sun-dried tomatoes packed in oil

1 ½ cups toasted walnuts

¼ cup extra-virgin olive oil

4 garlic cloves, minced

1 tsp salt

½ tsp ground black pepper

1 pound bowtie pasta or pasta of your choice

2 pounds ripe tomatoes

3 tsp red wine vinegar

2 cups arugula leaves

Optional additions: feta cheese, shaved parmesan or other hard Italian cheese, olives, and/or chickpeas

In a food processor or blender, add whole jar of sun-dried tomatoes and blend. 
Add more olive oil if there is not enough liquid to do the job.  Move sun dried tomatoes to a large bowl and add garlic, salt, and pepper.

Cook pasta to al dente and drain.

While the water is coming to a boil, coarsely chop the ripe tomatoes. Add to the sun-dried tomato mixture.  Add the drained pasta to the tomato mixture and stir to combine. Let sit until room temperature, about 15 minutes.

When ready to eat, taste the pasta salad. If flavors are muted, add salt and red wine vinegar. If it’s too sweet, add black pepper.  Stir in the arugula and walnuts just before serving.
