What better way to keep warm this week than a delicious beef stew!
Justin’s Slow Cooker Beef Stew
- 2 tbsp. olive oil
- 2 lbs. beef stew meat, cut into 1-inch pieces
- 1 ½ tsp.salt
- ¾ tsp. black pepper
- 2 tbsp. butter
- ½ lb. mushrooms, thinly sliced
- 3 tbsp. flour
- 3 cups beef stock
- 2 tbsp. tomato paste
- ½ tsp. dried thyme
- ½ tsp. paprika
- ¼ tsp. onion powder
- ¼ tsp. garlic powder
- ¼ tsp. dried oregano
Ingredients for 2nd hour:
- 1 lb. small potatoes, quartered
- 1 cup diced carrots
Ingredients for 5th hour:
- l cup frozen pearl onions
- ½ cup frozen green peas
- 1 tbsp. chopped fresh parsley leaves
Heat large frying pan to medium heat. Season beef with salt and pepper. Sear beef in pan with olive oil, doing to batches is necessary.
Add all ingredients to slow cooker, except for the potatoes, carrots, onions, peas, and parsley. Add those ingredients as instructed above. Cook on high for 6 hours total.
