Justin’s Lentil Soup with Orzo and Bacon

This is a nice, easy, comfort soup aided by the earthy flavors of bacon and rosemary.

¼ lb. cooked bacon (or pancetta), cut into ½ inch strips

2 carrots, diced

2 ribs celery, diced

1 large onion, diced

½ lb. mushrooms, sliced

6 cloves garlic, minced

2 ½ cups lentils

64 oz. chicken broth (2 of those big boxes)

1 cup water

1 tsp. dried rosemary

One 14.5 oz can tomato puree

1 and ½ tsp. salt (or to taste)

¼ tsp. red pepper flakes

¼ tsp. black pepper

½ cup orzo, ditalini, shells, or some other small pasta

2 cups baby spinach

Parmesan cheese

In a large pot, cook bacon until crisp.  Remove bacon but leave the fat, and add carrots, celery, onions, mushroom, and garlic.  Sauté about 10 minutes.  Add lentils, chicken broth, water, tomatoes, rosemary, salt, red pepper flakes, black pepper, and bacon.  Bring to boil and then simmer for 20 minutes.  Add pasta and simmer another 10 minutes or until pasta is done.  Add spinach and cook until wilted, another 2 minutes.  Taste for salt.  Serve in bowls and top with grated parmesan cheese (or some other hard Italian cheese).
