Justin’s Italian Wedding Soup

Well, it’s officially spring, but I’m not feeling it.  I have a cold and it is cold outside.  So I decided to make this delicious soup!  You should too!

For the Meatballs:

½ lb. ground beef
4 tbsp. chopped parsley
½ cup parmesan cheese (or any other hard Italian variety)
2 tbsp. Italian breadcrumbs
1 egg
6 cloves garlic, minced
½ tsp. salt
¼ tsp. black pepper

For the Soup:
2 tbsp. olive oil
2 diced carrots
3 diced celery ribs
1 large diced onion
1-15 oz. can crushed tomatoes
4-15 oz. cans or 1.5 quarts chicken broth
½ tsp. dried rosemary
1 tsp. salt
¼ tsp. black pepper
1 cup small pasta like ditalini or shells
2 cups baby spinach

Mix beef, parsley, cheese, bread crumbs, egg, half the garlic, salt, and pepper in a bowl.  Shape into small ¾ inch meatballs.  You should have about 20 meatballs.

In a large pot, saute onions, celery, and carrots in olive oil for about 5 minutes.  Stir in the broth, tomatoes, rosemary, salt, and pepper.  Bring to simmer and cook for 10 minutes.  Add pasta and stir.  After about 5 minutes, add meatballs.  Be sure to stir gently so the meatballs don’t break up!  After about 5 more minutes, taste for salt and then add the spinach.  Cook for 5 more minutes while the spinach wilts.  Serve with extra cheese and pepper.  And of course, some crusty bread!
