Indian Cabbage Stir Fry
This is a really easy and inexpensive Indian dish that is delicious with rice and maybe a dal. Also, feel free to add some protein to this to make it more of a complete meal.
3 tbsp. canola oil
2 tbsp. yellow or green split peas (Lettucehead has this)
1 tbsp. black or brown mustard seeds (Lettucehead has this)
1 tsp. cumin seeds
3 whole dried red chiles (optional)
1 serrano pepper, minced, with seeds
15 fresh or frozen curry leaves (optional) (you have to go to Denver or the Springs to get, but this dish will still be yummy without curry leaves)
3 tbsp. shredded dried coconut (optional) (Lettucehead has this)
1 small red cabbage, cored and finely chopped (about 6 cups)
½ tsp. salt, or to taste
Juice of 1 lime
Combine oil, yellow split peas, and mustard seeds in a large frying pan over medium-high heat. Cook for 1-2 minutes, until the mustard seeds begin to crackle.
Add cumin, red and green chiles, curry leaves, and coconut. Stir for 2 minutes or until cumin begins to turn golden brown.
Add cabbage and stir for 3-5 minutes, until barely wilted. The cabbage is best when it has a bite, so don’t cook too long or it will get mushy. Take off heat. Stir in salt and lime juice. You can serve this hot or at room temperature.
