Justin’s Garbanzo Soup with Spinach

This is a great soup to make at the start of the week and have leftovers for lunches.  Easy and delicious!

Five 14.5 oz. cans garbanzo beans (chickpeas), drained and rinsed
Two 32-oz. containers chicken broth
3 tbsp. olive oil
3 celery stalks, diced
3 carrots, diced
1 large onion, diced
6 cloves garlic, minced
1 tsp. dried rosemary
1 bay leaf
One 14.5 oz. can diced tomatoes (fire-roasted if you can find it)
1 cup orzo pasta (or some other small pasta)
1 tsp. salt
½ tsp. black pepper
½ lb. baby spinach

Put about half the garbanzo beans and half the chicken broth in a blender and puree.

In a large pot, heat oil and add celery, carrots, onion, garlic, and rosemary and sauté for about 5 minutes.  Add the pureed chickpeas, whole chickpeas, the rest of the chicken broth, bay leaf, tomatoes, pasta, salt, and pepper.  Bring to boil.  Reduce heat and simmer for about 8 minutes, or until pasta is al dente.  Add spinach and simmer another 3 minutes.  Taste for salt and pepper.
