Justin’s Drunken Noodles
This is a really yummy noodle dish for when you are in the mood for some Thai food but don’t want to drive to Poncha!
8 oz. wide rice noodles
2 tbsp. vegetable oil
4 cloves garlic, minced
1 serrano pepper, minced (optional – this makes it spicy!)
1 green and 1 red bell pepper, cut into strips
2 cups shredded cooked chicken (you can use rotisserie, or you can boil 2 boneless chicken breasts)
4 tbsp. soy sauce
4 tbsp. oyster sauce
2 eggs, beaten
½ tsp. sugar
1 and ½ cups bean sprouts
¼ cup fresh Thai basil, chopped (Italian basil will work too!)
Soften noodles according to package directions (usually requires a soak in hot water).
On high heat, sauté garlic, serrano pepper, and oil in a large pan.
Before garlic begins to brown, add bell peppers and cooked chicken.
Add soy sauce, oyster sauce, and noodles. Stir until everything is mixed well.
Move noodles to side of pan and add eggs. Mix to scramble and incorporate into noodles.
Remove from heat and add sugar, bean sprouts, and basil. Do a final mix and serve!
