I love frittatas for when I need to clean out the fridge, since you can put almost anything in a frittata thereby cutting down on wasted food that went bad. This is a yummy one, but feel free to substitute for whatever you have that needs to go!

Chorizo Frittata
1 small, finely diced
2 cloves of garlic, minced
2 tbsp. olive oil
½ lb. ground chorizo
1 roasted red pepper, diced
½ can chickpeas
1 teaspoon smoked paprika
2 handfuls spinach
8 eggs, beaten
¾ tsp. salt

Sauté onion and garlic in an oven-safe non-stick frying pan with olive oil until soft.
Add chorizo and brown completely.
Add red pepper, chickpeas, and paprika and sauté for a few minutes.
Add the spinach and keep stirring until it wilts.
Add eggs and salt to a large bowl and beat.
Add the eggs and stir gently to incorporate the eggs into the whole mixture, then allow to set over a medium heat, 3-4 minutes.
Preheat the broiler then slide the whole pan under the it to set the top of the frittata, it will only take a minute or two to become light
gold and puffy.
Remove from the broiler with oven mitts, and slide onto cutting board.

I like to cut into pizza slices and save in the fridge for quick breakfasts during the week.
