Justin’s Chicken Soup

It’s always good to have some chicken soup on handy for when a friend of loved one gets sick.  I always have one or two frozen containers ready to go to whomever would benefit from a bowl of comfort that isn’t overloaded with salt and tastes like actual chicken soup!  Grandma would approve!

  • One 4-5 pound whole chicken (or bone-in legs, thighs, breast equivalent)
  • Three 32-oz containers chicken broth
  • 2 large onions, diced
  • 3 cups diced celery (about 6 stalks)
  • 3 cups diced carrots
  • 1 cup chopped fresh Italian parsley
  • ½ tsp. dried thyme
  • Salt and pepper to taste

Get a large pot and add water until about halfway filled.  Add chicken and bring to a simmer, skimming off foam with a large spoon as it appears.  I usually simmer chicken for an hour or so – the longer it simmers, the tastier the broth will be.  For additional flavor, I sometimes throw in a carrot, celery tops, and a small onion if I have extra.

Once the chicken is cooked, carefully pull it out of the pot and allow to cool on a rimmed tray.  Strain the broth and discard any skin or veggies.  Once the chicken is cool enough to handle, separate the meat from the bones and add the meat to the strained broth.  Then add the extra broth, veggies, parsley, and thyme and allow to simmer for another 30 minutes or so, until the carrots are tender.  Add salt and pepper to your liking.

Some people like egg noodles, but I prefer white rice.  I cook that separately, since if you cook the pasta or rice in the soup pot, too much yummy broth will get absorbed.  I also store the frozen soup without the starch, and then when someone is sick I cook that as needed, add it to the bowls, and then pour the soup over it.

It’s nice to have this ready to go in the freezer in a pinch, since when you’re sick, you probably aren’t up for cooking!
