Justin’s Bowties with Sausage and Broccoli
A delicious, easy weeknight meal, ready in 30 minutes!
- 1 pound bowtie or similar pasta
- 4 tablespoons extra virgin olive oil
- 1 pound sweet or spicy Italian sausage, removed from casings
- 5 garlic cloves, sliced thin
- ½ cup dry white wine
- ½ cup chicken broth
- 1 pound broccoli florets, cut into 1-inch pieces
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon red pepper flakes
- 1 cup grated pecorino romano, gran padano, asiago, fontina, or parmesan
In a large skillet, heat 1 tablespoon of the olive oil over medium high heat. Crumble the sausage into the skillet and cook, breaking apart with a spoon, until lightly browned, about 6 minutes. Reduce the heat to medium and add the garlic; cook for 1 more minute.
Add the remaining 3 tablespoons of olive oil, white wine, chicken broth, broccoli, salt black pepper, and red pepper flakes. Cook, stirring frequently until the broccoli is tender yet still a bit crisp, 5-7 minutes.
While the broccoli is cooking, bring a large pot of salted water to a boil. Add the bowties and cook for about 2 minutes less than the instructions say.
Drain the pasta, reserving ½ cup of the water. I usually put a coffee mug in the colander and pour some water into it, then remove it and drain the rest. Pour pasta and water back into the pasta pot. Add the sausage and broccoli mixture, along with half of the cheese, and toss to blend. Taste and adjust seasoning. Transfer to a serving platter or individual bowls and pass the remaining grated cheese at the table.
