I am excited to be working for you as a Mortgage Consultant at Mountain Homes Lending in Chaffee County! As a way of introducing myself, I’d like to share one of my passions with you – Cooking!
*Justin’s Shrimp Scampi*
This is fast, easy, and delicious if you follow these steps. I’ve been tweaking this recipe for years and it’s a crowd pleaser! Be sure to have some crusty bread for sopping up the sauce!
1 pound linguine
4 tablespoons butter
4 tablespoons extra-virgin olive oil
1 large shallot, finely diced
5 cloves garlic, minced
Pinch red pepper flakes, optional
1 pound uncooked shrimp, peeled and cleaned
Salt and freshly ground black pepper
1/2 cup dry white wine
Juice of 1 lemon
1/2 cup finely chopped parsley leaves
Clean and season the shrimp with salt and pepper. Start the water boiling for the linguine. When it has come to a boil, add a little salt and the linguine. Cook for about 6 to 8 minutes or until the pasta is not quite done. Drain the pasta, reserving 1/2 cup of the water.
Meanwhile, in a large skillet, heat butter and olive oil. Add shallots, garlic, and red pepper flakes (if using) until the shallots are translucent, about 3 to 4 minutes. Add the shrimp to the pan and cook until they have turned pink, about 2 to 3 minutes. Remove shrimp from pan. Add wine, lemon juice, parsley and reserved pasta water and bring to a simmer. Remove pan from heat and add shrimp. Stir well and taste for salt and pepper. Plate pasta and top with shrimp and sauce. Serve with lemon wedges.
I hope your family enjoys this recipe! If you are looking for home-planning (or cooking) advice, I would be happy to be a resource!
