Justin’s Thai Stir Fry

This is a basic recipe with endless possibilities!  Mix and match meat with veggies.  You can even throw some shrimp in the mix!  For more spice, don’t seed the peppers.

2 tbsp peanut or sesame oil

1 cup diced onion

2 cloves garlic, minced

1 tbsp fresh ginger, minced

1-2 serrano or Thai chili peppers, seeded and diced (optional)

2 cups diced vegetables (zuchinni, squash, broccoli, asparagus, bell peppers, snow peas, mushrooms, cauliflower, carrots, or a combination thereof

½ pound thinly sliced chicken breast or skirt steak (optional)

4 tbsp oyster sauce

2 tbsp fish sauce

½ bunch cilantro, chopped (optional)

¼ cup toasted cashews or peanuts

juice from 1 lime

Heat oil in a large pan or wok.  Add onion and sauté on medium heat until onion is translucent.  Add garlic, ginger, and peppers.  Sauté for 2 more minutes.

Turn heat to high and add vegetables.  (Note: Some vegetables might need more or less cooking time.  The goal is to have vegetables snap and crunch.  For veggies like broccoli and cauliflower, I blanch them for 45 seconds and then rinse under cold water before adding to rest of veggies). 

Add oyster and fish sauce and stir.  Add chicken or beef.  Cook additional 3 minutes.  Take off heat.  Add cilantro, nuts, and lime juice.

Serve over rice.
