Caesar Brussel Sprouts

Happy Thanksgiving, Buena Vista! I love this holiday not just because of the family and friends gathering, but also because it’s a holiday that centers around cooking and the kitchen. I’m a bit of a traditionalist when it comes to the turkey and mashed potatoes and gravy, but do enjoy a little innovation each year when it comes to the other sides. This year, I’m trying a new version of brussel sprouts, this one with Caesar dressing! You never know until you try!
1 ½ tbsp. lemon juice
1 tbsp. mayonnaise
1 tbsp. Worcestershire sauce
1 tbsp. Dijon mustard
3 garlic cloves, minced
3 anchovy fillets, rinsed and minced
½ tsp. pepper
¼ tsp. salt
3 tbsp. olive oil
2 pounds brussel sprouts, trimmed and quartered
5 tbsp. olive oil
¼ tsp. salt
¼ cup panko bread crumbs
½ cup grated Parmesan cheese,
Whisk lemon juice, mayonnaise, Worcestershire, mustard, garlic, anchovies, pepper, and salt in large bowl until combined. Slowly whisk in oil until emulsified; set aside.
Combine brussel sprouts, 4 tablespoons olive oil, and ¼ teaspoon salt in large nonstick skillet. Cover skillet, place over medium heat, and cook, stirring occasionally, until brussel sprouts are bright green and have started to brown, about 10 minutes.
Uncover and continue to cook, stirring occasionally, until Brussels sprouts start to brown, about 5 more minutes. Transfer brussel sprouts to rimmed baking sheet and let cool for 15 minutes. Wipe skillet clean with paper towels.
Combine panko, another ¼ teaspoon salt and 1 tablespoon olive oil in now-empty skillet and cook over medium heat, stirring frequently, until golden brown, 2 to 4 minutes. Transfer to small bowl and stir in Parmesan.
Add brussel sprouts to dressing and gently toss to combine. Transfer to serving platter. Sprinkle with panko mixture and serve.
